Yes, chocolate is a fruit, made from the seeds of cacao pods. Those seeds are covered in the most delicious fruit pulp, which tastes nothing like chocolate but plays a huge role in giving the beans both flavor and all kinds of healthy antioxidants. Although the pulp is hard to come by, I managed to get my hands on some shipped to me directly from a cacao plantation in Ecuador.
After much experimentation, I combined the pulp with puréed lychees to create a refreshing fruit gelée, sprinkled it with cocoa powder and some cocoa nibs, and sealed it within a 70% dark chocolate shell. It’s 4 cacao pod products in one scrumptious bite: fruit pulp, cocoa powder, cocoa nibs, and chocolate.
