The first time I tasted the pulp that surrounds the seeds in a cacao pod—the seeds that ultimately become chocolate—I was amazed by the burst of tropical fruit flavor. It tastes nothing like chocolate, but it plays a vital role in developing the flavor of cacao beans as they ferment, an essential part of the chocolate-making process.
Now this pulp has been turned into 100% cacao juice by a company called Repurposed Pod. It’s great for mixing in cocktails, mocktails, smoothies, soda water, and juices. I’ve also made a sorbet by freezing it with some lemon juice and zest. Cacao juice, like chocolate itself, is packed with goodness, including magnesium, potassium, B vitamins, and antioxidants.
