Second, I add a splash of Ginger Shrub—a syrup crafted from ginger, vinegar, and cane sugar using a centuries-old technique. And third, once the ganache is set and cut, I hand dip each piece in dark chocolate topped with a sliver of crystallized ginger. Ginger three ways…plus chocolate.
