The NY Times recently highlighted the many flavors of Japan making their way into restaurants and home kitchens. Many of these flavors taste especially delicious in chocolate. The Flavors of Japan collection features ceremonial grade matcha tea straight from the fields and factory near Nagoya. The crispy, naturally-colored arare sprinkled on the milk and dark chocolates treats were recently brought back from Kyoto by my neighbor. She also guided me on the best Japanese organic hojicha powder for the bonbons and chocolate bar.
I’ve included a sample of hojicha tea, so you can see for yourself how the taste of tea you drink is transformed into a different experience when paired with chocolate. The collection includes:
- 6-piece box of Matcha, Yuzu Sidecar, and Hojicha Latte bonbons
- Dark chocolate Hojicha Bar
- Box of 10 milk and dark Japan-Inspired Treats
- Sampler bag of hojicha tea (4 servings)

After several disappointing attempts to develop a bonbon featuring the unique tart taste of yuzu—a popular Asian citrus fruit—I finally succeeded with a recipe that’s a very satisfying combination of tart and sweet. It was inspired by the classic Sidecar cocktail typically made with Cognac, orange liqueur, lemon juice, and a sugared rim.
A Sidecar I recently created with Pierre Ferrand Yuzu Curacao (a French liqueur made with yuzus macerated in Cognac) was absolutely delicious. So I set about adapting it into an equally tasty bonbon. This Yuzu Sidecar features a ganache made with Yuzu Curacao, yuzu juice, freshly squeezed lemon juice, and white chocolate, encased in dark chocolate topped with a dusting of sugar. Yum.
