Like many successful inventions, this one came about by accident, when I was trying to do two things at once and added cinnamon to the wrong bowl. That gave me the idea to try making a milk chocolate ganache with New England maple syrup, cinnamon, and a touch of vanilla. It took a bit of tweaking to get the flavors just right. The result: It tastes like French Toast. Really. The homemade maple sugar topping gives it a nice little crunch.
