This year’s Valentine’s Day Collection features a variety of heart-decorated bonbons and flavors that were especially popular this past December. I am a huge fan of chocolate bars—my own as well as bars crafted by a variety of bean-to-bar companies using cacao beans from around the world. These are what I turn to when I need my daily chocolate fix, and I especially enjoy trying different bars.

These cute little bunnies are filled with a tasty cheesecake ganache, a recipe I developed based on baked cheesecake squares—a favorite family treat. The milk chocolate bunnies have a crunchy Biscoff cookie crust. The cheesecake ganache in the dark chocolate bunnies is topped with a mixed berry gelée. Currently, only milk chocolate bunnies are available.

Nine little hand painted solid chocolate eggs made with French Valrhona chocolate—a melt-in-your-mouth 70% dark, a creamy 40% milk, and an organic 35% white. Designs will vary, but all will taste delicious. These will be available the week of March 25.

Zest from organic oranges is steeped in cream with cinnamon sticks and the slightest touch of clove. The flavored cream is then mixed with local wildflower honey, fresh-squeezed orange juice, vanilla seeds, French orange blossom water, and 70% dark chocolate. The result: a luscious orange filling for this hand-painted dark bonbon.

These playful squares of 70% dark chocolate are filled with a fruity, sweet ganache made with blackcurrant purée and Crème de Cassis liqueur. Blackcurrants, also known as cassis berries, are loaded with antioxidants, vitamins A, B, and C, and other good things like potassium, magnesium, iron, phosphorous, zinc, and calcium. But never mind all that—they just taste great!

The Mayans and Aztecs were among the first to discover the pleasure of chocolate. They crushed cacao beans to create a drink often mixed with chile peppers and other spices. These milk chocolate bonbons, infused with an organic Spiced Mexican Rooibos tea, celebrate that early history. The tea itself is flavored with Mexican pasilla and ancho chiles, cocoa beans, cinnamon, and saffron, creating a softly spiced, deliciously creamy chocolate.
The Aztecs believed that cacao was a gift from Quetzalcoatl, the god of wisdom. They considered it an aphrodisiac and mood enhancer with mystical powers. Who am I to disagree?
