Bergamot, a fragrant citrus fruit mostly grown in Italy, is considered to be a hybrid of lemon and sour orange. The oil from the rind (and sometimes the peel) is used to flavor Earl Grey and Lady Grey teas. These bonbons are made with an infusion of herbal, caffeine-free Rooibos Bergamot tea from South Africa, resulting in an elegant, well-rounded, and flavorful milk chocolate.
The tea is imported by MEM TEA, a local company known for the high quality and variety of its teas. Rooibos (pronounced ROY-boss), also called redbush or red tea, is packed with antioxidants and has been shown to have numerous health benefits. Tasting notes for this tea include vanilla, candied lemon, and orange peel.

Like many successful inventions, this one came about by accident, when I was trying to do two things at once and added cinnamon to the wrong bowl. That gave me the idea to try making a milk chocolate ganache with New England maple syrup, cinnamon, and a touch of homemade vanilla. It took a bit of tweaking to get the flavors just right. The result: It tastes like French Toast. Really. The homemade maple sugar topping gives it a nice little crunch.

“Cream as rich as an Irish brogue, coffee as strong as a friendly hand, sugar as sweet as the tongue of a rogue, and whiskey as smooth as the wit of the land” is how the inventor of Irish Coffee described it back in the 1940s. It’s hard to improve on this comforting combination of four ingredients, but for me chocolate makes just about everything better.
My version of Irish Coffee features a creamy milk chocolate ganache flavored with Writers’ Tears Copper Pot Irish Whiskey and coffee brewed from home-roasted beans. The milk chocolate cup is topped with a not-too-sweet organic white chocolate adorned with dark chocolate flakes. (AVAILABLE BY MARCH 14)
Writers’ Tears was recommended to me when I worked on a children’s media project with a creative team in Ireland. Aged in bourbon casks, it’s described by the maker as a “unique marriage of Single Pot Still and Single Malt Irish Whiskey” with notes of apple, vanilla, and honey.
The name celebrates the golden era of Irish whiskey and renowned Irish writers—George Bernard Shaw, Oscar Wilde, James Joyce, W.B. Yeats, among others—who apparently enjoyed this combination so much that “when they cried, their tears were of whiskey.”

After several disappointing attempts to develop a bonbon featuring the unique tart taste of yuzu—a popular Asian citrus fruit—I finally succeeded with a recipe that’s a very satisfying combination of tart and sweet. It was inspired by the classic Sidecar cocktail typically made with Cognac, orange liqueur, lemon juice, and a sugared rim.
A Sidecar I recently created with Pierre Ferrand Yuzu Curacao (a French liqueur made with yuzus macerated in Cognac) was absolutely delicious. So I set about adapting it into an equally tasty bonbon. This Yuzu Sidecar features a ganache made with Yuzu Curacao, yuzu juice, freshly squeezed lemon juice, and white chocolate, encased in dark chocolate topped with a dusting of sugar. Yum.

My daughter gets the credit for this version of a chocolate peanut butter cup—she had very specific requirements for the peanut butter-to-chocolate ratio as well as which brand of peanut butter I should use.
