My recent visit to the Nishiki food market in Kyoto inspired these tasty treats. Piped circles of milk and dark chocolate are topped with Goshiki Arare (Five-Colored Hail), a popular Japanese garnish that adds the color and crunch of candy nonpareils but without the sugar and artificial food coloring.

    I couldn’t resist decorating this chocolate bar with 23K edible gold leaf, because it features one of my favorite Valrhona dark chocolates, one that sets the gold standard for chocolate deliciousness. Valrhona makes this single-origin chocolate from rare Gran Blanco white cacao beans that grow in the tropical rainforest of northern Peru. It has a creamy, deep chocolate flavor with tasting notes of sun-ripened blackberries and a hint of roasted peanuts.
