Made with single origin wild Bolivian chocolate from Felchlin in Switzerland, this bonbon stands out as one of the favorites from the two Single Origin Collections I previously offered. The cacao grows wild and the ripened pods are transported by horses or dugout canoes. The chocolate has tasting notes of lemon and grapefruit. Each bonbon is hand-dipped then sprinkled with cacao powder.

LOCAL PICKUP ONLY. These individually hand-painted hot chocolate bombs are made with one of my favorite Valrhona single-origin chocolates, produced from rare Gran Blanco cacao beans that grow in the tropical rainforest of northern Peru. They are filled to the brim with additional grated chocolate for a decadent cup of steaming hot chocolate.
Sure, you can make hot cocoa bombs with inferior chocolate or candy melts, filling them with cocoa powder and sugar. But if you’re going to treat yourself to hot chocolate, why not treat yourself to the crème de la crème? These are packaged individually, nestled in a clear box festooned with a mini-bow, perfect for gifts and stocking stuffers.
For best results: Place the hot chocolate bomb in a narrow mug. Heat 6 oz. of milk until almost boiling. Pour over the hot chocolate bomb and wait a minute or so for it to melt. Stir really well and reheat slightly if necessary. Enjoy!

I’m loving this Madagascar chocolate made by Felchlin in Switzerland. It’s delicious on its own and with other flavors that complement the unique taste of chocolate made with cacao beans grown in Madagascar. Crispy pieces with a hint of mango add a pop of color and a satisfying crunch. Pepper and chocolate? Surprisingly, yes!
The Salt ‘n’ Pepper version includes two kinds of peppercorns grown in Madagascar: a wild pepper called Voatsiperifery with floral and citrus notes, and Baies Rose pink peppercorns—not a true pepper but a berry related to cashews with a delicate peppery flavor. I couldn’t help adding a third pepper into the mix: Kampot Red Pepper, a rare pepper grown only in a specially-designated region of Cambodia. Its sweet and spicy notes add another flavor dimension. A sprinkling of Fleur de Sel from the Camargue region of France enhances the overall experience.
(Note: These are also available in a Tasting Bar size. The three peppers are from Curio Spice, a local, woman-owned Certified B Corporation in Cambridge.)

I couldn’t resist decorating this chocolate bar with 23K edible gold leaf, because it features one of my favorite Valrhona dark chocolates, one that sets the gold standard for chocolate deliciousness. Valrhona makes this single-origin chocolate from rare Gran Blanco white cacao beans that grow in the tropical rainforest of northern Peru. It has a creamy, deep chocolate flavor with tasting notes of sun-ripened blackberries and a hint of roasted peanuts.

It takes a really great chocolate for me to add to my current variety of chocolates made by Valrhona in France. I tasted this single-origin Madagascar chocolate, made by Felchlin in Switzerland, during a class I took with Luis Amado, an internationally renowned chocolatier. After trying it again at home, I knew I wanted another dark chocolate fans to enjoy it as well.
The chocolate delivers a well-balanced fruity taste that is less acidic than some other chocolates made with Madagascar cacao beans. It has a hint of roasted nuts, forest berries, and warm spices, with a lovely, lingering finish.

This flavor was inspired by a bonbon made by a friend who is also one of my favorite chocolatiers. I thought the combination would be ideal with the Madagascar chocolate and pink peppercorns I recently bought, but I was struggling with how to incorporate the wine. He generously shared his secret, which worked like a charm.
A red wine gelée tops a dark chocolate ganache laced with crushed Baies Rose pink peppercorns. Native to Madagascar, these berries have a gentle peppery flavor with fruity and floral notes that pair well with Madasgascar chocolate and a full-bodied red wine.

These nine square treats are made with Åkesson’s organic 100% Criollo chocolate, winner of seven Gold awards. A very limited quantity of rare cacao beans are harvested in Madagascar each year to make this Heirloom-designated chocolate, which has a subtle fruity-sweet tartness with notes of citrus and red berries. Dried hibiscus flowers, dried tart cherries, or crystallized ginger add a touch of sweetness to this naturally sugar free chocolate.
You can also order these made with Valrhona 70% dark chocolate, for anyone not 100% enthusiastic about 100% dark chocolate.
