Take a journey to Peru, Madagascar, Bolivia, Tanzania, and the Dominican Republic as you taste chocolates made with cacao beans from each of these countries. This set of six tasting pieces from five countries that produce fine quality cacao was inspired by my recent trip to Paris, where I bought a similar collection of chocolates. It’s an ideal way to experience the many different flavor notes that emerge during the process of growing, fermenting, roasting, and transforming cacao beans into chocolate.
- Sample 2-3 different tasting pieces at a time, noticing how the flavors evolve as each chocolate melts in your mouth.
- Try the chocolates in a different order and on different days—your favorite may change each time.
- Invite family and friends to join you for a tasting.
- Pair the chocolates with wine or whisky and see how the flavor experience changes.
- Enjoy snacking on the tasting pieces when you need a chocolate pick-me-up.

Made with single origin wild Bolivian chocolate from Felchlin in Switzerland, this bonbon stands out as one of the favorites from the two Single Origin Collections I previously offered. The cacao grows wild and the ripened pods are transported by horses or dugout canoes. The chocolate has tasting notes of lemon and grapefruit. Each bonbon is hand-dipped then sprinkled with cacao powder.

LOCAL PICKUP ONLY. These individually hand-painted hot chocolate bombs are made with one of my favorite Valrhona single-origin chocolates, produced from rare Gran Blanco cacao beans that grow in the tropical rainforest of northern Peru. They are filled to the brim with additional grated chocolate for a decadent cup of steaming hot chocolate. (Designs vary.)
Sure, you can make hot cocoa bombs with inferior chocolate or candy melts, filling them with cocoa powder and sugar. But if you’re going to treat yourself to hot chocolate, why not treat yourself to the crème de la crème? These are packaged individually, nestled in a clear box festooned with a mini-bow, perfect for gifts and stocking stuffers.
For best results: Place the hot chocolate bomb in a narrow mug. Heat 6 oz. of milk until almost boiling. Pour over the hot chocolate bomb and wait a minute or so for it to melt. Stir really well and reheat slightly if necessary. Enjoy!

After creating a milk chocolate bonbon featuring Japanese hojicha tea, I set about developing a dark chocolate bar infused with hojicha as well. For starters, I had to figure out how to incorporate the tea without introducing a gritty texture. Then I experimented with how much hojicha to add so the flavor would stand out without overpowering the chocolate.
Hojicha tastes entirely different from other Japanese green teas, because the leaves are roasted instead of steamed. It has a toasted, nutty flavor and a slight bitterness that becomes more mellow with chocolate. I could eat this bar every day! These will be available beginning October 1st.

I couldn’t resist decorating this chocolate bar with 23K edible gold leaf, because it features one of my favorite Valrhona dark chocolates, one that sets the gold standard for chocolate deliciousness. Valrhona makes this single-origin chocolate from rare Gran Blanco white cacao beans that grow in the tropical rainforest of northern Peru. It has a creamy, deep chocolate flavor with tasting notes of sun-ripened blackberries and a hint of roasted peanuts.

Three chocolate bars, each offering a distinct tasting experience. The Peruvian Gold bar showcases one of my favorite chocolates from Valrhona, crafted from rare Gran Blanco cacao grown in the tropical rainforest of northern Peru.
The Raspberry Chocolate Bar is hand-painted on one side and finished with a scattering of crisp, tangy dried raspberries on the other.
My newest creation, inspired by a bar I tasted in Lisbon, brings together roasted pistachios, fruity pink peppercorns, and a touch of Himalayan salt—an unexpected pairing that surprises and delights the senses.

The ancient Maya considered their cacao beans a gift from the gods—an heirloom cacao still treasured today. Although the cacao beans travel all the way from the lush Maya Mountain forests of Belize to arrive here, these bonbons are the result of a local collaboration with Amy Vachon of Sotto Chocolate, a one-woman company making a variety of single origin chocolate bars.
I spent a day with Amy observing the many steps involved in transforming cacao beans into chocolate, and she spent time with me creating bonbons from her chocolate. Now you can enjoy the results! (Available in February.)
The bars and bonbons are available separately, but I highly recommend tasting both of these locally made chocolates. Flavors you may notice include honey, pineapple, raisin, dried cherry, and floral notes.

It takes a really great chocolate for me to add to my current variety of chocolates made by Valrhona in France. I tasted this single-origin Madagascar chocolate, made by Felchlin in Switzerland, during a class I took with Luis Amado, an internationally renowned chocolatier. After trying it again at home, I knew I wanted another dark chocolate for everyone else to enjoy as well.
The chocolate delivers a well-balanced fruity taste that is less acidic than some other chocolates made with Madagascar cacao beans. It has a hint of roasted nuts, forest berries, and warm spices, with a lovely, lingering finish.

This flavor was inspired by a bonbon made by a friend who is also one of my favorite chocolatiers. I thought the combination would be ideal with the Madagascar chocolate and pink peppercorns I recently bought, but I was struggling with how to incorporate the wine. He generously shared his secret, which worked like a charm.
A red wine gelée tops a dark chocolate ganache laced with crushed Baies Rose pink peppercorns. Native to Madagascar, these berries have a gentle peppery flavor with fruity and floral notes that pair well with Madasgascar chocolate and a full-bodied red wine.
