These are for serious ginger lovers. First, I infuse dark chocolate ganache with freshly grated ginger. Second, I add a splash of Spiker’s Ginger Bite Shrub—a locally-made syrup crafted from ginger, vinegar, and cane sugar using a centuries-old technique. And third, once the ganache is set and cut, I hand dip each piece in dark chocolate topped with a sliver of crystallized ginger. Ginger three ways…plus chocolate.
