You don’t have to be a fan of tea to savor the variety of flavors created by infusing tea in cream to make these chocolates. This collection includes 2 new bonbon flavors made with Chai Cascarilla and Rooibos Bergamot from Mem Tea in Cambridge along with bonbons made with white pomegrante tea, Mexican rooibos, ceremonial grade Matcha from Japan, and fragrant Jasmine green tea.

These are for serious ginger lovers. First, I infuse dark chocolate ganache with freshly grated ginger. Second, I add a splash of Ginger Shrub—a syrup crafted from ginger, vinegar, and sugar using a centuries-old technique. And third, once the ganache is set and cut, I hand dip each piece in dark chocolate topped with a sliver of crystalized ginger. Ginger three ways…plus chocolate.
