Description
After creating a milk chocolate bonbon featuring Japanese hojicha tea, I set about developing a dark chocolate bar infused with hojicha as well. For starters, I had to figure out how to incorporate the tea without introducing a gritty texture. Then I experimented with how much hojicha to add so the flavor would stand out without overpowering the chocolate.
Hojicha tastes entirely different from other Japanese green teas, because the leaves are roasted instead of steamed. It has a toasted, nutty flavor and a slight bitterness that becomes more mellow with chocolate. I could eat this bar every day!
