It’s hard to describe the complex flavors of this South American bean; the aroma and taste remind me of almonds, cinnamon, and vanilla. When I trained at Valrhona in France we made chocolates with grated tonka beans, and I was excited to taste tonka bean bonbons during a recent visit.
I bought a bag of these beans at one of my favorite shops (G. Detou) and created my own version of Tonka Bean bonbons. You will be surprised at the flavor; it’s like nothing you’ve ever tasted.

Almonds and chocolate are a classic combination, especially when enhanced with a dash of salt. This salt came all the way from the Wieliczka Salt Mine in Poland. This UNESCO World Heritage Site, dating from the Middle Ages, has 2,000 underground chambers surrounded by walls of rock salt. So of course when I visited the mine I had to bring home a jar of their coarsely-ground salt.

December is the one time each year that I make the largest variety of flavors, so each box will feature a beautiful array of handcrafted chocolates. Available flavors will be posted on my website and will vary throughout the month as I work on making everything.Â
Although I can’t create custom boxes, if you prefer all dark, all milk, or flavors without alcohol or nuts (peanut butter), let me know in the ORDER NOTES section of your order. Note that most of the milk chocolates contain gluten, and Cool Mint contains wheat. Also let me know if you need to pick up/ship your chocolates by a specific date.
NOTE: Order by December 10 for shipped chocolates to arrive in time for Christmas.
