Japan-Inspired Bonbons

This set of three bonbon flavors — Matcha, Yuzu Sidecar, and Hojicha Latte — features some of my favorite Japanese ingredients.
I began making Matcha bonbons years ago, when my neighbor brought me ceremonial grade matcha tea from Japan. Yuzu Sidecar bonbons came about after several years of experimenting with various combinations of ingredients to highlight the complex citrus flavors of this popular Japanese fruit. And most recently I created the Hojicha Latte bonbon; this roasted, nutty Japanese tea complements and deepens the rich flavor of chocolate. This will be available beginning October 1st.

These are for serious ginger lovers. First, I infuse dark chocolate ganache with freshly grated ginger. Second, I add a splash of Ginger Shrub—a syrup crafted from ginger, vinegar, and cane sugar using a centuries-old technique. And third, once the ganache is set and cut, I hand dip each piece in dark chocolate topped with a sliver of crystallized ginger. Ginger three ways…plus chocolate.

Yuzu Sidecar

After several disappointing attempts to develop a bonbon featuring the unique tart taste of yuzu—a popular Asian citrus fruit—I finally succeeded with a recipe that’s a very satisfying combination of tart and sweet. It was inspired by the classic Sidecar cocktail typically made with Cognac, orange liqueur, lemon juice, and a sugared rim.
A Sidecar I recently created with Pierre Ferrand Yuzu Curacao (a French liqueur made with yuzus macerated in Cognac) was absolutely delicious. So I set about adapting it into an equally tasty bonbon. This Yuzu Sidecar features a ganache made with Yuzu Curacao, yuzu juice, freshly squeezed lemon juice, and white chocolate, encased in dark chocolate topped with a dusting of sugar. Yum.
