The NY Times recently highlighted the many flavors of Japan making their way into restaurants and home kitchens. Many of these flavors taste especially delicious in chocolate. The Flavors of Japan collection features ceremonial grade matcha tea straight from the fields and factory near Nagoya. The crispy, naturally-colored arare sprinkled on the milk and dark chocolates treats were recently brought back from Kyoto by my neighbor. She also guided me on the best Japanese organic hojicha powder for the bonbons and chocolate bar.
I’ve included a sample of hojicha tea, so you can see for yourself how the taste of tea you drink is transformed into a different experience when paired with chocolate. The collection includes:
- 6-piece box of Matcha, Yuzu Sidecar, and Hojicha Latte bonbons
- Dark chocolate Hojicha Bar
- Box of 10 milk and dark Japan-Inspired Treats

These cute little bunnies are filled with a tasty cheesecake ganache, a recipe I developed based on baked cheesecake squares—a favorite family treat. December is the one time each year that I make the largest variety of flavors, so each box will feature a beautiful array of handcrafted chocolates. Available flavors will be posted on my website and will vary throughout the month as I work on making everything.
Although I can’t create custom boxes, if you prefer all dark, all milk, or flavors without alcohol or nuts (peanut butter), let me know in the ORDER NOTES section of your order. Note that most of the milk chocolates contain gluten, and Cool Mint contains wheat. Also let me know if you need to pick up/ship your chocolates by a specific date.

Even if you’re not a fan of tea, steeping it in cream and mixing the strained cream with chocolate creates an entirely different experience. Hojicha, a Japanese tea with a roasted, nutty taste complements and deepens the rich flavor of chocolate. I experimented with milk and dark chocolate versions, each topped with a thin layer of organic white chocolate and dusted with powdered hojicha. Both are delicious but the mellower milk chocolate bonbon is more reminiscent of an iced Hojicha latte. This will be available beginning October 1st.

I began making Matcha bonbons years ago, when my neighbor brought me ceremonial grade matcha tea from Japan. Yuzu Sidecar bonbons came about after several years of experimenting with various combinations of ingredients to highlight the complex citrus flavors of this popular Japanese fruit. And most recently I created the Hojicha Latte bonbon; this roasted, nutty Japanese tea complements and deepens the rich flavor of chocolate. This will be available beginning October 1st.

The Mayans and Aztecs were among the first to discover the pleasure of chocolate. They crushed cacao beans to create a drink often mixed with chile peppers and other spices. These milk chocolate bonbons, infused with an organic Spiced Mexican Rooibos tea, celebrate that early history. The tea itself is flavored with Mexican pasilla and ancho chiles, cocoa beans, cinnamon, and saffron, creating a softly spiced, deliciously creamy chocolate.
The Aztecs believed that cacao was a gift from Quetzalcoatl, the god of wisdom. They considered it an aphrodisiac and mood enhancer with mystical powers. Who am I to disagree?
