Japan-Inspired Bonbons

This set of three bonbon flavors — Matcha, Yuzu Sidecar, and Hojicha Latte — features some of my favorite Japanese ingredients.
I began making Matcha bonbons years ago, when my neighbor brought me ceremonial grade matcha tea from Japan. Yuzu Sidecar bonbons came about after several years of experimenting with various combinations of ingredients to highlight the complex citrus flavors of this popular Japanese fruit. And most recently I created the Hojicha Latte bonbon; this roasted, nutty Japanese tea complements and deepens the rich flavor of chocolate. This will be available beginning October 1st.

The Mayans and Aztecs were among the first to discover the pleasure of chocolate. They crushed cacao beans to create a drink often mixed with chile peppers and other spices. These milk chocolate bonbons, infused with an organic Spiced Mexican Rooibos tea, celebrate that early history. The tea itself is flavored with Mexican pasilla and ancho chiles, cocoa beans, cinnamon, and saffron, creating a softly spiced, deliciously creamy chocolate.
The Aztecs believed that cacao was a gift from Quetzalcoatl, the god of wisdom. They considered it an aphrodisiac and mood enhancer with mystical powers. Who am I to disagree?

Irish Coffee

“Cream as rich as an Irish brogue, coffee as strong as a friendly hand, sugar as sweet as the tongue of a rogue, and whiskey as smooth as the wit of the land” is how the inventor of Irish Coffee described it back in the 1940s. It’s hard to improve on this comforting combination of four ingredients, but for me chocolate makes just about everything better.
My version of Irish Coffee features a creamy milk chocolate ganache flavored with Writers’ Tears Copper Pot Irish Whiskey and coffee brewed from home-roasted beans. The milk chocolate cup is topped with a not-too-sweet organic white chocolate adorned with dark chocolate flakes. (AVAILABLE BY MARCH 14)
Writers’ Tears was recommended to me when I worked on a children’s media project with a creative team in Ireland. Aged in bourbon casks, it’s described by the maker as a “unique marriage of Single Pot Still and Single Malt Irish Whiskey” with notes of apple, vanilla, and honey.
The name celebrates the golden era of Irish whiskey and renowned Irish writers—George Bernard Shaw, Oscar Wilde, James Joyce, W.B. Yeats, among others—who apparently enjoyed this combination so much that “when they cried, their tears were of whiskey.”

You’ll find mendiants in chocolate shops all over Paris. Originally, the dried fruits and nuts symbolized the colors of the robes of four Roman Catholic monastic orders. These French Mendiants are sprinkled with dried fruits, crystalized ginger, nuts, cacao nibs, and a variety of other toppings. My visit to the Nishiki food market in Kyoto inspired these tasty treats. Piped circles of milk and dark chocolate are topped with Goshiki Arare (Five-Colored Hail), a popular Japanese garnish that adds the color and crunch of candy nonpareils but without the sugar and artificial food coloring. These will be available beginning October 1st.
