Here are two delicious chocolate bars to enjoy on Easter or savor when you need a little chocolate fix. The Crispy Madagascar dark chocolate bars are made with single-origin Madagascar chocolate laced with bits of crunchy mango. The hand-painted milk chocolate bars are made with with 40% Valrhona chocolate (designs will vary). These will be available after March 20.

You’ll find mendiants in chocolate shops all over Paris. Originally, the dried fruits and nuts symbolized the colors of the robes of four Roman Catholic monastic orders. These French Mendiants are sprinkled with dried fruits, crystalized ginger, nuts, cacao nibs, and a variety of other toppings. If you don’t want your box to include any mendiants with nuts, let me know in the ORDER NOTES.

My visit to the Nishiki food market in Kyoto inspired these tasty treats. Piped circles of milk and dark chocolate are topped with Goshiki Arare (Five-Colored Hail), a popular Japanese garnish that adds the color and crunch of candy nonpareils but without the sugar and artificial food coloring. These will be available beginning October 1st.

Madagascar Bars

I’m loving this Madagascar chocolate made by Felchlin in Switzerland. It’s delicious on its own and with other flavors that complement the unique taste of chocolate made with cacao beans grown in Madagascar. Crispy pieces with a hint of mango add a pop of color and a satisfying crunch. Pepper and chocolate? Surprisingly, yes!
The Salt ‘n’ Pepper version includes two kinds of peppercorns grown in Madagascar: a wild pepper called Voatsiperifery with floral and citrus notes, and Baies Rose pink peppercorns—not a true pepper but a berry related to cashews with a delicate peppery flavor. I couldn’t help adding a third pepper into the mix: Kampot Red Pepper, a rare pepper grown only in a specially-designated region of Cambodia. Its sweet and spicy notes add another flavor dimension. A sprinkling of Fleur de Sel from the Camargue region of France enhances the overall experience.
(Note: These are also available in a Tasting Bar size. The three peppers are from Curio Spice, a local, woman-owned Certified B Corporation in Cambridge.)

Hojicha Bar

After creating a milk chocolate bonbon featuring Japanese hojicha tea, I set about developing a dark chocolate bar infused with hojicha as well. For starters, I had to figure out how to incorporate the tea without introducing a gritty texture. Then I experimented with how much hojicha to add so the flavor would stand out without overpowering the chocolate.
Hojicha tastes entirely different from other Japanese green teas, because the leaves are roasted instead of steamed. It has a toasted, nutty flavor and a slight bitterness that becomes more mellow with chocolate. I could eat this bar every day! These will be available beginning October 1st.

I couldn’t resist decorating this chocolate bar with 23K edible gold leaf, because it features one of my favorite Valrhona dark chocolates, one that sets the gold standard for chocolate deliciousness. Valrhona makes this single-origin chocolate from rare Gran Blanco white cacao beans that grow in the tropical rainforest of northern Peru. It has a creamy, deep chocolate flavor with tasting notes of sun-ripened blackberries and a hint of roasted peanuts.

Three chocolate bars, each offering a distinct tasting experience. The Peruvian Gold bar showcases one of my favorite chocolates from Valrhona, crafted from rare Gran Blanco cacao grown in the tropical rainforest of northern Peru.
The Raspberry Chocolate Bar is hand-painted on one side and finished with a scattering of crisp, tangy dried raspberries on the other.
My newest creation, inspired by a bar I discovered in Lisbon, brings together roasted pistachios, fruity pink peppercorns, and a touch of Himalayan salt—an unexpected pairing that surprises and delights the senses.

At one of the small neighborhood food markets in Lisbon, I came across a chocolate bar topped with whole pistachios, pink peppercorns, and a sprinkling of salt. I loved the flavor combination!
I immediately made my own version when I got home, featuring Baies Rose pink peppercorns from Madagascar. Although they look like peppercorns, they’re actually dried berries with a fruity, floral, and peppery taste. Paired with whole pistachios and a touch of Himalayan salt, the result is a chocolate bar that surprises and delights the senses.
