Single Origin Chocolate Bars

These single origin chocolate bars are made with Swiss chocolate produced with cacao beans from Bolivia, the Dominican Republic, and Madagascar. The organic Dominican Republic chocolate has notes of black tea and mild tobacco. The cacao from Bolivia grows wild and the ripened pods are transported by horses or dugout canoes; the chocolate has hints of lemon and grapefruit. The chocolate from Madagascar has tasting notes of fruit, roasted hazelnut, and forest berries.
For an added treat, pair these with the Single Origins Collection of bonbons. I especially like to try the bar first, savor the creaminess of the bonbon, then go back to the pure flavor of the chocolate. But they all taste delicious in whatever order you eat them. You can select a 9-piece box of bonbons with a set of 3 chocolate bars below.

These are for serious ginger lovers. First, I infuse dark chocolate ganache with freshly grated ginger. Second, I add a splash of Ginger Shrub—a syrup crafted from ginger, vinegar, and sugar using a centuries-old technique. And third, once the ganache is set and cut, I hand dip each piece in dark chocolate topped with a sliver of crystalized ginger. Ginger three ways…plus chocolate.
